2023 Nicolas Jacob L'Etoile La-haut Chardonnay Ouille, Jura, France Division 100% Alvarinho (Albariño )Organic. 100% Chardonnay from the upper part of Nicolas vineyard in LEtoile, planted in 1953. The vineyard is . 7 ha total (divided into upper and lower parts, hence the name) on marl soil. The grapes are settled for 12h after manual harvest, and spontaneously fermented in 228 barrels. Elevage is 18 24 months in demi muid and topped up (ouill) to prevent oxidation. No additions of any kind including SO2.
