It's the kind of Pinot a chef would pour with dinner
This Cask Collection release blends straight bourbons aged four to nine years
then rested three years before bottling
sandier Cote Blonde -- with the traditional splash of Viognier
and it lands closer to serious than poolside: bone-dry
Domaine William Fevre Chablis 1er Cru Vaillons 2023 Author DK It's the kind of PinotIf Montmains is the steely sibling, Vaillons is the rounder one. The site sits on the same left bank of the Serein but tends to give a broader, more fleshy Chablis. Fevre ages a portion in older barrels for texture, and the 2023 leans into that with white peach and acacia framing the classic oyster shell core. Among the most reliable Premier Crus in the village, and a calling card from a domaine that farms more of these slopes than almost anyone else.
