2021 Domaine Collotte Marsannay Vieilles Vignes, Cote de Nuits, France Villa Bucci Maestro Mezcalero Leoncio SantiagoThe Marsannay " Vieilles Vignes " is the result of a blend of different terroirs of the Marsannay appellation. The grapes come from vines that are over 40 years old. The grapes are harvested by hand and sorted on arrival at the vat room. The grapes are then 100% de stemmed before being put into vats. After a pre fermentation cold maceration of 4 to 5 days, reheating the vat activates the work of the indigenous yeasts for gentle alcoholic fermentation.
