2021 Le Grappin x Vin Noé Bulles, Burgundy, France Porter Creek A total of 14 monthsThe vin clair, is 50% Bourgogne Aligot from Le Grappins Mcon La Roche Vineuse (organically farmed, not certified) and Vin Nos direct press organic Pinot Noir from Mercurey. The two halves were blended in Spring 2022 once dry and malolactic conversion was complete and was elaborated by one of Burgundys best crmant houses. The prise de mousse was done with a cultured house yeast and a house liqour, rather than with industrial yeast an grape concentrate
