Aurore Casanova “Union Grand Cru” (Le Mesnil-sur-Oger & Puisieulx) Champagne, France (B19–21 ) Lammidia VINIFICATION: Traditional vinificationThis cuve unites certified organic Grand Cru Chardonnay from Le Mesnil sur Oger (Rose et Jutes) with a perpetual reserve of Pinot Noir from Puisieulx (Les Petites Vignes). Fermentations are spontaneous; Chardonnay is raised on lees in barrel without racking, and the Pinot Noir rserve perptuelleinitiated in 2016is refreshed annually. The wine is bottled without fining or filtration and finished Extra Brut using a liqueur based on the Pinot Noir
