2021 Azienda Agricola COS Frappato Terre Siciliane IGT Sicily, Italy Neversink Fermented and aged 30 monthsSOIL: Red soil of medium consistency; made up of subalpine sands composed of limestone and silica. VITICULTURE: Hand harvested. Vines average 15 years of age. VINIFICATION: Spontaneous fermentation in concrete tanks on the skins with indigenous yeast. AGING: Eight months in concrete vats followed by three months in the bottle before release.
